Yesterday
A real mixture of pictures from my birthday. Beautiful flowers, cake and tea at the pump room. Maroccan food and wine in the evening. Had an amazing day. Im so happy about all my presents, cards, texts and emails that I recieved yesterday. It made my day.

What a great weekend. Family over from Sweden. Sightseeing. Stonehenge. Easter chocolates. Long walks. Swedish breakfasts with favourite ryebread. Homemade salmon dishes. Wine. Swedish magazines. Salt liquorice. Yak Yeti Yak restaurant.

A Passion
These pictures were taken during one of the most happiest times in my life. The joy of backpacking. No stress, no worries, burning sun, empty beaches, turquoise sea, amazing cheap food and fruity drinks, a love that you leave behind, thinking he is the ONE and crying your eyes off at the airport going home. Those were the days. I love travelling. For me, nothing beats that!.
These pictures were taken on the beach in Mexico and Belize. Sorry about the weird panorama shapes. This was before the digital camera time, and I thought panorama pictures was the coolest thing back then.

love and pain
This is a song by a Swedish band called Eskobar. Love the lyrics. Back in the days, I remember listening to this song, crying over some guy I was totally in love with. We had broken up and I listened to songs that were quite depressing and that would make me feel even worse. Not sure why I did that to myself. But anyway, it's a good song.

My mamma is coming
Look at me, yesterday baking and today planting spring flowers outside. Very ambitious. No, actually I wanted to plant the outside because my mum (mamma in swedish) is flying over for a 5 day stay. She is arriving on Saturday. And the place has got to look good. Not that she would really care if it didn't, she might not even pay any attention to the flowers or any of that. But ever since I moved abroad and she calls me to say that she is coming to visit, I get totally stressed out. I clean like a freak, fill the fridge to the top and I want everything to be just perfect. It's weird. Not sure really why this is. Maybe I just want to show her that I am doing alright for myself. I got my life under control (which I don't really have) or maybe I just want to make her proud, proud of me turning out pretty good planting spring flowers in March and having a tidy and clean home. Does anyone recognize themselves in this?

He said I might have ruined his reputation now. hope not.
Ok here it is step by step.
1. In a large bowl cream the softened butter and sugar together.
2. Add eggs. One at a time. Beating until creamy.
3. Blend in milk.
4 In another bowl mix the flour, baking powder, salt and lemon rind.
5. Pour into the batter. Mix well.
6. Scrape into loaf pan.
7. bake in 170C oven for 55-60 minutes.
8. When Loaf is ready, add the glaze while it's hot.
To make glaze.
1. 100 g sugar and Jucie of 1 lemon in a saucepan stir and heat until sugar is dissolved.
Done.

Christopher's famous lemon Loaf
Here is something for all you lemon lovers!!
I have had a baking day today, that doesn't happen very often, but sometimes I even surprise myself.
You will need:
115 g butter
200 g Sugar
2 Eggs
120 ml milk
200 g Flour
1 teaspoon baking powder
1/2 teaspoon salt
1 lemon rind
In a large bowl mix sugar and butter
In another bowl mix together flour, baking powder, salt and lemon rind.
Add eggs, one at a time, into the flour mix bowl. beating it until creamy.
Mix everything up together nice and slow.
Scrape it into a greased loaf pan. Don't forget to grease. Important. In the oven for 55-60 minutes at 170 C.
Lick the bowl afterwards or use a spoon if you are a person who like the cake mix. I do.
Voila! and the lemon loaf is ready! Aaaaamazingly good! with a coffee or a cup of tea. And yeah don't forget to glaze it if you want to have that on the top. It's easy, just squeese some lemon juice in a saucepan and add sugar. Then pour it over the hot loaf.
