Mamma's Blueberry Cake.

People who know me, know I love cake. And photographing cakes. I made this one because it's my all time favourite. My mother used to make it to us kids when we were little and trust me, this cake meant pure happiness and pleasure. That's how bloody nice it is! So I hope I've made my mother proud making this one that I thought looked just like the one I had as a child.

swedish chocolate balls.


Ok guys. These are my chocolate balls I made some time ago. It's a Swedish classic. Very tasty and doesn't require any hard work at all, so I think if you fancy something sweet for the weekend give recipe a try.
Ok, this is how you do them:

It takes about 20 minutes + the 1 hour cooling in the fridge.
Makes 10 balls.

100 g butter
1 dl sugar
2 tbs cacao
3 dl oatmeal
2 tbs cold espresso coffee or 3 tbs coffee
1 tbs vanilla sugar

Melt the butter.

Mix sugar, vanilla sugar, cacao, oatmeal, coffee and the melted butter in a bowl.
Put the ready mix in the fridge for about 1 hour. Just to let it stiffen and it will be easier to roll the balls.


Roll the mix into small balls. Roll them in the pearl sugar or if you haven’t got that use coconut flakes.

Voila. Done.

Salt and Vinegar Potato Salad.






I made this Salt and Vinegar potato salad today for lunch. It was really nice. And tasty. If you're a fan of S&V crisps, you should definitely try this one. I'm a bit lazy and can't be bothered to write the whole recipe down for you guys so I will just link to the site I found it on. CLICK HERE. It was easy. I just changed the original recipe slightly. I used new potatoes instead and added fresh green beans.

Monday again. Eating my breakfast and listening to the radio. How was your weekend? ..Mine was ok. Not great. Not bad. It was just ok. I'm hoping this week is gonna be better, or in fact, great. It is what you make of it. Right!?

Dinner:
Rosemary and lemon Cod wrapped in pancetta. Fried courgettes and English asparagus with a lemon aioli.

My boyfriend is spoiling me and my sister and I love it.

when I'm home alone.


Day off. So lovely. Made myself an omelette for lunch. That's usually what I make when I'm eating alone. I spice it up with everything I can find, Peppers, red onions, some feta cheese and some fresh herbs. No too bad. Now, got to get ready, meeting up with a friend and her boy in an hour. The Cupcakes.

Ok. So here they are. The cupcakes that I made last week. I've had people emailing me about a recipe for them, and most of you have asked about the icing....So this post is for you guys! Since it was the first time making these cakes we wanted to experiment which frosting would be the tastiest and the prettiest.

The icing for the pink cupcakes we used 140 g butter and 140 g icing sugar and a few drops of pink food colouring all mixed together.
And for the chocolate ones we used 300 g mascarpone and 150 g melted milk chocolate.

The cakes made with mascarpone were so much better!!... it's an easier icing to work with, they looked better, and tasted so much better...the pink ones made with butter and icing sugar were pretty sickly after a while to be honest.

and yeah...the cake sponge mix was just taken from a normal muffin recipe that I found online, but we added coffee in the mix so they would taste abit more.....then added a little extra coffee and sugar syrup just when they've come out of the oven to make them a bit more juicier. We love the taste of coffee!

So there you go. I'm rubbish explaining recipes, but hope this was ok!

Me and my boyfriend tried something new today. Baking Cupcakes.
That turned out to be pretty yummy too.
Cupcake flavour: coffee.
Icing: Mascarpone cheese with chocolate and strawberry flavour with sprinklers.

A great day to eat cake. Celebrating all you mothers in Sweden. Happy mothers day!!

My Greek plate.



My cooking may not be amazing, but i'm learning AND enjoying it. Today I made my famous meatballs, if it's one thing I do know how to do and something that does taste pretty great are my big meatballs. I like them spicy so I always add loads of garlic (today I used about 8 cloves) 2 red chilis, dried oregano, chili powder, salt and pepper and lots of chopped fresh parsley. I served them with tzaziki and a feta salad. My boyfriend said he was impressed.

My weekend




Not too much to say about my weekend. With a broken toe, there's not too much you can do. But I did bake a cake. A chocolate cake with marshmallows. I pretty much ate it myself. I've been a bit bored.
